Pancakes, the Sunday Stack

Stack of PancakesStack of Pancakes Being hungry for pancakes here in Prague led me to do an internet search for recipes. Every Sunday, and on random weekdays, I have been turning out batches of flapjacks for the family. I have now settled on the perfect recipe, that I am proud to say involves a bit of my own tweaking, and thus I feel as if this recipe is actually mine.

This pancake recipe makes six plate sized cakes and twelve if you double the amounts of all the ingredients. I have done my best to make the instructions as detailed as possible, but if you want to cut to the chase you should: mix the dry together, mix the wet together, mix the wet into the dry, fry.

THE SUNDAY STACK

Ingredients

  • dry
    • 1 1/2 cups all-purpose flour
    • 3 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 1 tablespoon white sugar
  • wet
    • 1 1/4 cups milk
    • 1 egg
    • 3 tablespoons butter, melted

Directions

  1. Take out your egg to get it to room temperature. You always warm your eggs to room temperature before cooking don't you?
  2. Take out your maple syrup and stick into a pot of hot tap water.
  3. In a large mixing bowl, measure in the flour, baking powder, salt and sugar. Mix together with a wooden spoon
  4. Start your griddle on very low heat and add all the butter to melt.
  5. In a new mixing bowl, measure in the milk and add the egg. Wisk together thoroughly with a fork.
  6. Turn the heat off the pan and pour all the melted butter into the milk and egg mixture. Wisk together thoroughly with a fork.
  7. Make a well in the center of the dry ingredients and pour in the wet mixture. Mix until fairly smooth. Do not over mix.
  8. Whip out any excess butter from your skillet and warm over/on medium heat
  9. Pour a plate sized pancake from a ladle onto your skillet. After a minute or two bubles will begin forming in the pancake, rising, popping and filling. When the bubbles pop but do not fill in, it is time to flip your pancake.
  10. Side two should take half the time to get golden brown.

Serve with butter and the now warmed maple syrup. I have also served this recipe with blueberries and would suggest adding the blueberries to the pancake immediately after pouring it into the pan.
